Tomatillos are known as the Mexican husk tomato. They're fun to grow because the lantern-shaped husks appear first, resembling empty globes. Within a few weeks, the fruit gets bigger in size and splits the husk when it's ready to harvest. If tomatillos are harvested early, they have a nice sour flavor. When left on the vine longer, they actually get a little sweeter. They are used most often for green sauces, stews and in salads. For ideas as to how to use tomatillos, check out our Pinterest page.
